Hey everybody,

This week we decided to go in a different direction for the ROTW. The past three weeks its been chocolaty, rich, dense- but delicious none the less. We tossed a few recipes back and forth before we came upon an agreement. We decided to go with something not so rich this time. I remembered a cookie that I had made a few times over the holidays, so we decided to make those! It’s a “healthier” cookie than most.

Apple Cinnamon Oatmeal Cookies

Much to our dismay the cinnamon chips are only seasonal, so to replace the lack of cinnamon chips we went a little heavy handed on the spices. In the past i’ve omitted the butter completely and added more applesauce. This recipe is also great with pecans tossed in, this time we left them out.

These cookies were a winner for Holly and I. We are both big fans of apple cinnamon. Holly stated that this one was a sure-fire win for her because her favorite oatmeal is Apple Cinnamon. This cookie is basically apple cinnamon oatmeal! The apple taste was very prominent, and it was nice when you got a big bite of apple. We loved how soft they were! So Holly and I loved them, but how did Mike feel about it?

Mike enjoyed them, but compared to it’s other ROTW counterparts, it just didn’t measure up! It isn’t like your normal cookie, it’s not crispy, it has more chew than your average and it doesn’t have chocolate. He still liked it, but it’s tough to beat peanut butter, chocolate chip, chocolate drizzle, pretzel cookie bars!
